Oma's Kohlrouladen (grannies cabbage rolls) for 4 servings you need: 1 cabbage (small size) 400 gram minced meat, mixed beef and pork . Also good with minced lamb. 2 slices of a white bread (just toast will do) 2 medium sized onions (peeled, and 1 cut in slices, fine chop the other one) 1 egg salt, pepper 1 teasponn of caraway or cumin, I use seeds and ground them in a mortar, but you can ofc also use ready ground caraway/cumin. Ok, here we go, we need a large pot with boiling hot water with salt and the caraway. Blanch the whole cabbage in the water for some minutes, until you can take the cabbage leafs from the stalk. Keep the water for later, you'll need some of it. Oh, preheat your oven meanwhile to 180°C, you need it later. For 4 rolls, you need 8 or 12 whole cabbage leaves (depending on the size) Have them ready for later. Now for the filling Soak the bread in water and squeeze it good, put it into a bowl. Add 1 fine chopped onion, the egg, a trace or two of pepper and salt. knead all the ingredients to a homogenous mass. You might like it some more spicy, jsust add some paprika powder or some more salt and/or pepper. Don't oversalt it ;), just taste a bit opf the mass before you add some mor Now lay out 2 or 3 of the cabbage leaves (overlapping). take 1/4 of the minced meat mass and put it on top in the middle of the cabbage leaves layer. Fold it to a neat package and take some thread to bind it. You can also use wwoden toothpicks to fixate the package, but I prefer thread. Put a roasting pan on your cooker/stove and slowly/gently roast the cabbage rolls from all sides in some margarine. Add the onion slices, cut the remaining cabbage to stripes and add them also. Pur some of the cabbge water into the roasting pan, and add more if necessary. When the cabbage rolls and stripes are brown, add some more of the cabbage water untilthe rolls are half covered. Put the roasting pan into you preheated oven for about 1 hour. That's it, you might serve it with some potatoes
